Been reading recipes and decided to just get in the kitchen and make some stuff with cream cheese while I am at home today.

1--
8 ounce cream cheese softened
1 pkg sf jello
Mix all together with one cup boiling water. When mixed, add one cup cold water and mix.
I just stirred it by hand, but if you do not want small bits of cream cheese, should probably mix in the blender.
I used sf peach jello. Delicious. I am thinking that a few crushed pecans sprinkled on top would add a nice touch and may try that in the future.

2-
8 ounce cream cheese softened
1 stick butter softened
Add 1 Tbsp cocoa
Add Splenda to taste... I used 3 packets.
Mix thoroughly. I was going to make balls, but let my butter get a little bit too soft, so it is in a bowl in the refrigerator... may still make balls. Did taste what was on the spoon and it is yummy.

I am sure there are lots of variations of things to do with cream cheese out there. Any suggestions?

Oh, the second one is yummy. We call 'em HFBs for High Fat Balls.

I'll be watching this thread, because I love cream cheese.

HFB's - that is appropriate. Just had one a few minutes ago and it really does help. I love cream cheese too.

Sounds great! You may want to try using unsalted butter when making desserts with cream cheese and butter combined.

Mmmm...sounds good!

Lately (even though I'm kind of sick of eggs) I have been making this wonderful..."thing" I have a great, cheap nonstick muffin pan, made for 6 large muffins. Grease cups, Preheat to 375.

4 eggs
1/2 cup parm. shredded
1/4 cup cheddar, or colby-jack cheese shredded
8 oz. cream cheese, softened in microwave (warm)

Mix, actually whip this all together until you can hardly tell there's cream cheese in it. ladle into the cups, bake for 25 minutes.

Super easy, and tasty. Also, once cooled, you can just pick them up with your fingers, DH just decided he loves this recipe too. I make variations using sour cream, canned mushrooms, and spinach. I am not afraid to experiment! This recipe was an experiment. Good Luck!
