Okay, so one of my goals this year is to find and try new low carb recipes.

That includes trying a new or hardly even eat veggie of the week! Chayote squash will be on the menu somewhere this week!

What are you doing to keep you plan fresh and exciting!?

Sorry, I'm not that exciting when it comes to cooking... but I'm always looking for new ideas with eggs!

Anyone got any?

I'd try the squash, but I wouldn't know what to do with it!

I'm doing it by switching plans altogether! :hysterical:

Two words: gallbladder.

OK, maybe that's one word. We're kicking up the fish and foul this year and cutting back on the red meat and pork. I love boiled crablegs and fresh boiled popcorn shrimp. It's low in carbs and in fat and is oh so delicious.

Ive studying all of Lyndas Low Carb recipes also. I love to try new recipes.

Ok... I'm not a great recipe reader... but where does it call for cream cheese? I have that! lol!!! The picture looks good though! :hysterical:

edit: Oops, I didn't read the filling portion! Told you I wasn't a great recipe reader! I always thought they put the ingredients at the top! lol... Yep, I'm stupid!!! lol!!!!!!

I just made these and they are so GOOD that I believe they will become my breakfast staple !!!! I can not remember where I got the recipe...I believe it was on one of the forums I belong to. If anyone knows please remind me so I can give credit where it is due! You have to try these! They are incredible!!!
(I used smoked gouda in mine.....OMG!!!! SOOOOOO GOOOD!!!) :yummy:

Here it is:

Cheesy Breakfast muffins


3 eggs
2.5 oz heavy cream
3.5 oz cream cheese
2 ozchopped cooked bacon
3 oz edam or gouda cheese
a dash of salt (to taste)


Preheat oven to 375 F


Seperate egg yolks from whites
Whip the whites until stiff and keep in the fridge.


Mix the yolks in a seperate bowl with the soft cheese, the cream, salt, grated edam cheese and chopped cooked bacon.


Mix the yolk/cheese mixture together carefully with the whites.
Pour batter into muffin cups. Bake in oven, 15-20 minutes, at 375 F
They are done when they have risen and are golden brown on top.

Servings: 9-12 (depending on how big you want them)

Carbs per muffin: 0.9 (based on 9 servings)

Those look great Kat! And I LOVE to have things like that to make ahead and just grab in the morning.

It makes low carb life so much easier for those people that sit at the computer until the last minute and are running out the door because they're almost late for work....(me?) hummmm :D
