I was looking through my recipes today and came across this one that used to be a favorite at the church potlucks.Easy to convert to Lowcarb ,and pretty yummy. I made it for lunch today.Nice when ya want a hot lunch.Im sorry i cant tell you how it will reheat ,theres never any left overs :hysterical: Family always loved it. And i cut the recipe way down just for my lunch today.

Hot Chicken Salad
2c chicken diced ( i used left over turkey)
2c sliced celery
1/2c toasted almonds or 1small can of waterchestnuts( I didnt have either today in the house but it was still good without)
1/2tsp salt
2Tbsp lemon juice
1c Mayonnaise ( now, i used to make this with miracle whip:D but...... so i still put a dash of splenda and paprika in my mayo)
1/2 c grated cheese
1c crushed potato chips (leave these off of coarse)
Combine all ingrediants except cheese and chips. Toss lightly and put in pam sprayed casserole dish.Sprinkle with cheese and chips. Bake 450 for 10 or 15 min. Serve hot.
