View Full Version : Low Carb - Kat's Tart Chayote "Apples"

These taste just like granny smith apples from the center of a pie! Imagine the fun you could have with these! They are really yummy! Just made some!

2 Large Chayote Squash

1/2 cube of butter

Cinnamon to taste

4-5 packets of splenda (to taste)

Key lime juice (or just lime juice if you can't find key lime juice- lemon might be ok too) - to taste: I suggest to start with 1 TBSP - this is what gives the squash that realistic granny smith apple-like tartness. You can make it as tart as you like...or not :)

Peel Chayotes, remove centers and slice thinly. Melt butter over medium heat in a large skillet. Add squash, cinnamon and splenda and turn to coat with mixture. When the chayote begins to look transluscent (or begins to get limp) add the lime juice. Turn to coat squash throughly.

Squash is done when soft and transluscent. You can remove it from the heat sooner though to avoid a mushy texture.

This would be excellent on top of home made LC ice cream! In yogurt? In a tart shell with an nut crust? Oh yum! :eating:

Total carbs for recipe: 16 net carbs - 4 carbs per serving.....careful! They are addictive! :yummy:

I saw this recipe once and wondered how it was. Thanks for the heads up. I'm going to try it as soon as I find some chayote

That's sounds great.

I'm trying to stay away from all (not really) sweet stuff for now but I really want to try that. I've used jicama in the past and I like it, but it stays too crunchy. This sounds like it does cook down a bit, yum! Thanks for sharing!

It really is yummy...I have seen other recipes on a couple forums that just had splenda, butter, cinnamon etc...but the finished chayote did not taste anything like apples to me....So I added the key lime juice. It is essential in the recipe if you want them to taste like real apples......Slice them nice and thin and cook them thouroughly so they soften up...You will be surprised at just how much they taste like granny smith apples! :)

ok, it was good and I topped it with some plain yogurt per your suggestion. The chayote squash cost me .85 cents each so I is not only good buy pretty cheap.

Me too! I made it last night. I used sugar free vanilla syrup instead of the granular splenda...it was so good!

I had mine with a serving of instone pudding, it was a great treat. And I took some for breakfast this morning too! YUM!
