That's-a Meatloaf
"Interesting, elegant twist on the same old meatloaf. Good enough for company, easy enough for everyday."

Original recipe yield:
8 servings
PREP TIME 15 Min
COOK TIME 1 Hr 15 Min
READY IN 1 Hr 30 Min

INGREDIENTS
2 pounds ground beef
2 eggs
1/2 cup tomato sauce
3/4 cup fresh crumbled bread
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons dried parsley
1 teaspoon dried oregano
6 slices ham
6 medium slices mozzarella cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, eggs, tomato sauce, bread crumbs, cheese, garlic, parsley and oregano. Mix well and form into an 8x10 inch rectangle.
Place the ham over the rectangle mixture, and then the cheese over the ham. Roll up jelly-roll style so that you end up with a rolled loaf about 5x8 inches.
Place roll seam side down into a 5x9 inch loaf pan and bake at 350 degrees F (175 degrees C) for 75 minutes. Drain excess fat.

I liked the receipe until i saw the calories
of 505??? could that be a possible typo???
thought that was kind of high......nothing
in there seems to warrant it comeing out that
high calorie....

There's 40g of fat. And those are huge slices, if you cut it into only 8 pieces. Lots and lots of cheese, plus 2lbs of ground beef.

I'm kinda torn - in some ways, 500 calories for one part of a meal sounds like a lot, but compared to what a lot of people eat (a QP w/cheese, fries, and a coke is 1440 calories) it's not so bad.

Perhaps you could go with smaller servings on a day when you went with lower calories at other meal times.

I proly woudlnt eat but a quarter of a serving.

I've not tried anything else because it doesn't amount to too terribly much in a smaller serving, but you might be able to increase the cheese, cut down on the bread crumbs, and supplement with wheat germ or flax seed. I wouldn't just substitute flax, though, because it would probably affect the texture too much.

Oh, maybe ground almonds? lol, James used Triscuits once, when we were out of crackers and bread. Gave it a nutty flavor and it was pretty good. There's got to be a low carb meatloaf out there - could see what they substituted with.

I've just left out the breadcrumbs when making it in the past and you can definately tell something is missing. I like the triscuit idea! Lots of fiber in those compared to regular bread. :)

This one turns out good. When I made it, I did not add the bell pepper and onions, but may do another one soon. Also, I used bbq pork skins. Read another version similar to this one, that suggests adding a pound of sausage to the mix also. Interesting.

1-1/2 pounds ground beef
1 small can mushrooms -- chopped
1/4 cup onion -- minced
1/4 cup bell pepper -- chopped (I usually omit these)
1 cup grated cheddar cheese
1/2 cup cream
1 large egg -- beaten
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
2 tablespoons mustard
1 cup pork skins -- crushed

Mix all ingredients together, form loaf and place in loaf pan. Bake at 350 for 1 hr 15 minutes. (Or until done).

15 grams of carb for the entire meat loaf (including peppers).
